Kombucha Grown Up

Kombucha is a phenomenon that rose to popularity in United States in the early 90’s, with its origins largely unknown. It is traced back to eastern Europe in the early 20th century, and is common in many Asian countries. Kombucha is a tea-based drink that utilizes SCOBY, an acronym for symbiotic colony of bacteria and yeast, which feeds on added sugar in turn propagating a wide variety of probiotics and B vitamins. It is said to have positive effects on the immune system, digestive system and other benefits that are as of yet unsubstantiated in the  medical community.

Kombucha

As it is a fermented beverage with live cultures, it is indeed living and quite unique. Many off the shelf brands start out with trace amounts of alcohol, but some were found to have increased percentages considerably after taking residence on a store shelf. This created a bit of a quandary. In this state, they must then be treated as an alcoholic beverage and can only be purchased by adults. Proprietary processes were put in place to remedy this situation, but some continue to be sold with the proper adult protocols.

BOOCHCRAFT

Enter Boochcraft. The creators of this local San Diego based beverage went all in on craft Kombucha, and added a twist. Rather than trying to fight the potential for yeast run amok, they took it one step further, they designed a hand crafted adult version that is top to bottom small batch, certified organic, and delicious. Most of us have tried some versions that are a bit aggressive and vinegary, some downright difficult to palate, but Boochcraft is actually quite enjoyable and refreshing. Their closely monitored formula allows them to deliver a uniform 7% alcohol (right about in the middle of the modern beer spectrum), while preserving the precious microorganisms. This seems to be about right, according to the brewers it provides the best balance and who are we to disagree?

The tea is sourced from a single grower, it is processed to certain specifications, and as in any product, the raw materials are paramount to quality. The fruit is locally sourced (when possible), hand cold pressed, and the herbs and spices also meticulously selected and sorted for superior flavor profile. Even the yeast for the secondary fermentation is Champagne yeast, which provides an inimitable brilliance and clarity. Again, every element in Boochcraft is certified organic.

The secondary ingredients also carry a purpose greater than just flavoring, each carry their own benefits such as Ginger, Hibiscus, Rosehips and Turmeric, and the list goes on. As these deliciously unique elixirs are small batch and seasonal, each fermentation is unique and never the same twice. Depending on fruit sources, there may be availability gaps on some flavors, but rest assured, as soon as Mother Nature permits, you will have a wide variety from which to choose.
