Ingredients
Salad:
1/2 cup quinoa
1 pinch sea salt
1 1/2 cup canned black beans, rinsed
1 cup corn, rinsed, steamed, and cooled
1 red bell pepper, rinsed and diced
1/2 cup rinsed, chopped cilantro
Dressing:
3 tablespoons extra virgin olive oil
1/4 cup lime juice
3 cloves garlic, pressed
1 teaspoon sea salt
1 teaspoon freshly cracked black pepper

Prepare quinoa. Boil water in a small sauce pan, slowly add quinoa, cover, and simmer for 10 minutes or until all water is absorbed. Fluff quinoa to separate. Remove from heat and set aside to cool.

Meanwhile, prepare the rest of the salad. Whisk dressing ingredients together and set aside. In a large bowl, combine black beans, corn, diced bell pepper, and chopped cilantro.

Once quinoa has cooled, fold it in with the rest of the salad. Top with dressing and serve.
