Kale & Carrot Salad

New Seasons Market Kale & Carrot Salad

Ingredients

SALAD:

  • 1 bunch curly kale, stems removed, leaves thinly sliced

  • 3/4 cup or shredded carrots grated

  • 1/3 cup roasted, salted sunflower seeds

DRESSING:

  • 1/4 cup mayonnaise

  • 1 tablespoon tamari

  • 1 1/2 tablespoon rice wine vinegar

  • 1 tablespoon sesame oil

  • 1 clove garlic minced

  • 1 tablespoon fresh ginger minced

  • 1/4 teaspoon cayenne pepper

  • 1/2 teaspoon cumin ground

  • to taste salt

Directions

  1. In a large salad bowl combine carrots, kale, and sunflower seeds. In a small bowl whisk together dressing ingredients.
  2. Pour over kale mixture; toss well to combine. Add salt to taste.
