Ingredients

SALAD:

  • 1 curly kale, stems removed, leaves thinly sliced

  • 3/4 or shredded carrots grated

  • 1/3 roasted, salted sunflower seeds

DRESSING:

  • 1/4 mayonnaise

  • 1 tamari

  • 1 1/2 rice wine vinegar

  • 1 sesame oil

  • 1 garlic minced

  • 1 fresh ginger minced

  • 1/4 cayenne pepper

  • 1/2 cumin ground

  • salt

Directions

  1. In a large salad bowl combine carrots, kale, and sunflower seeds. In a small bowl whisk together dressing ingredients.
  2. Pour over kale mixture; toss well to combine. Add salt to taste.
