Ingredients
2 slices of your fave bread (Sicilian bread is great here)
1 tablespoon butter
1/2 apple (we used Pacific Rose) sliced
2 ounces Brie cheese sliced
1 teaspoon Dijon mustard
small handful baby salad greens
Directions

Spread ½ tablespoon butter on one side of each slice of bread.

Spread ½ teaspoon Dijon mustard on the opposite side of each slice of bread.

Place one slice of bread, butter side down, onto a skillet heated over medium heat.

Layer—in order—Brie slices, apple slices, salad greens and more Brie slices, atop slice of bread.

Leaving sandwich open-faced for now, cover skillet with a lid. (This will help the cheese to melt more quickly.) Check buttered side of bread for browning frequently.

Once cheese has started to melt and bread has turned golden, place second slice of bread, butter side up, on sandwich and flip.

Cook for another 2-5 minutes, until bread is golden brown. Serve immediately.
